There’s nothing better than a great pie. We share lots of pie recipes here and I think we could use a few more to see us through the DKos primary wars. As a survivor, barely, of the great Primary Wars of 2008, allow me to share some family favorites.
These have fortified and sustained me eaten with a good hot cup of coffee or a glass of cold milk. Also, wine works with them when times are really treacherous.
Or any other beverage.
So, first off…
Strawberry Pie by my Mom (98 years old)
1 quart of strawberries
2 T cornstarch
1 cup sugar
1 baked pie shell
½ pint whipping cream
Chop or mash ½ of berries. Add sugar and cornstarch. Cook until transparent. Put remainder of berries in pie shell. Pour mixture over them. Chill. Serve with whipped cream.
Mom’s Apple Pie
6 apples
½ to 2/3 cup sugar
2 T flour
1 tsp. cinnamon
1 T butter
Pare, slice and cut apples into small pieces. Sift dry ingredients together and mix with apples. Fill pie pan with crust (the easy kind). Add apple mixture and dot with butter. Cover with top crust. Bake at 450 degrees for 15 minutes then 350 degrees for 45 minutes.
